The Best Way to Cook a Baked Potato

Baked potatoes are probably one of the easiest things in the world to cook.  However, if you're not careful, they can come out really dry.  We thought we'd share with you the best way that we've found to cook them.

Ingredients
  • 1 large baking potato
  • Butter
  • Sea (or kosher) salt

Wash the potato, then liberally coat the outside with butter or margarine.  Sprinkle the kosher salt onto the outside of the potato.  The margarine should help hold the salt in place.  Double wrap the potato in aluminum foil, then bake at 400 degrees for two hours.  The potatoes will come out very moist, and with great tasting skins.

If you really want to make them come out good, and if you'll be cooking your meat on a charcoal grill, start the grill early and when the charcoal is ready, move a bit off to the side.  Put the wrapped potatoes into the grill, surrounding them with hot coals.  Your potato skins may end up a little hard this way, but the insides will be fantastic.  And besides, I really like the skins when they are cooked in a grill in this manner!
