Lexington North Carolina BBQ Sauce

Before making this BBQ sauce, I need for you to understand something.  You Texans are going to have to get past this.  I know it will be hard, but please try.

BBQ means PORK.  Nothing more, nothing less.   I love your brisket, and I love your beef ribs.   But it ain't BBQ. 

This recipe mimics the famous vinegar taste found in Lexington, the BBQ capitol of the world.

Ingredients

  • 1½ cups of apple cider vinegar
  • 10 tablespoons of ketchup.  We highly recommend W Ketchup
  • salt to taste
  • ½ teaspoon cayenne pepper
  • pinch of crushed hot red pepper flakes
  • 1 tablespoon sugar
  • ½ cup of water
  • ground pepper to taste
Combine everything in a small saucepan and bring to a simmer.  Cook, stirring until the sugar dissolves.  Let cool.  Makes 3 cups.

This sauce should store safely in your refrigerator for a good long while.  I like to use this on Boston butts and picnics, sometimes even injecting this into the meat prior to cooking.
