Lexington North Carolina BBQ Sauce

Before making this BBQ sauce, I need for you to understand something.  You Texans are going to have to get past this.  I know it will be hard, but try.

BBQ means PORK.  Nothing more, nothing less. 

This recipe mimics the famous vinegar taste found in Lexington, the BBQ capitol of the world.

 
Ingredients
  • 1½ cups of distilled white or cider vinegar
  • 10 tablespoons of ketchup
  • salt to taste
  • ½ teaspoon cayenne pepper
  • pinch of crushed hot red pepper flakes
  • 1 tablespoon sugar
  • ½ cup of water
  • ground pepper to taste
 
Combine everything in a small saucepan and bring to a simmer.  Cook, stirring until the sugar dissolves.  Let cool.  Makes 3 cups.

This sauce should store safely in your refrigerator for a good long while.  I like to use this on Boston butts and pork shoulders, sometimes even injecting this into the meat prior to cooking.
